With burgers, better taste comes with a larger percentage of fat. 80% meat / 20% fat tastes much better than 90/10 for instance. It also gets a smokey flavor if grilled or barbequed over coal or wood versus in a pan or in the oven. In a pan or on a flat top stove, it can brown against the metal which provides a lot of flavor too. Condiments add a lot. BBQ sauces, mayo, ketchup, mustard or just salt and pepper, etc. There are also some wild burgers with lots going on.
