Picking a Niche Without Past Projects

Hi everyone, I was wondering if I could get some advice on choosing a niche for my business. I'm a Webflow developer, and my goal is to create end-to-end websites, from brand identity to copywriting, design, and finally development. I've done some projects in the past, but I realized they were the wrong kind of projects. A lot of them were e-commerce, and Webflow sucks for e-commerce, plus it's just stressful overall to build those sites, so I decided to get out of that niche. I then went on to build simple templated insurance sites for an agency and realized insurance wasn't as exciting to work with.

I'm now back to trying to pick a different niche, and a couple that seem interesting to me are Fitness and SAAS. The issue is that I have a chicken-and-egg problem. How do I break into these niches when I haven't done sites for either niche? How do I reach the niche to get leads to build sites for the niche? Lol, this is what I've been stuck with, and I feel like reaching out to this community would be a step in the right direction. Also wondering if these are even the right niches to choose

If it helps, my skills are Web development, some copywriting, sales, and SEO. Learning design is up next, but right now it's my weakness. My past work experience is just in career service centers in college and university. I also live in Tempe, Arizona, and my interests are fitness, reading, self-improvement, and learning the shamisen.
