What should I do if there’s a need in a commoditized industry/market

what if in a certain scenario I find a problem in the market that needs to be solved, but yet the industry in which that product is categorized in is a commoditized industry/ product. Is it a situation in which you should bail and search for another problem to solve in which that solution has not become commoditized, OR it is still possible to take advantage Of the commoditized competition and provide value and solving a problem in that industry that all the competitors are not solving, having potential of Succeeding and basically “ breaking the commoditization chains “ and actually achieving productocracy?

basically: if there’s a need in a commoditized market, what do you do. Go for it and possibly take advantage, or bail because it is still a commoditized market?

Personal story I have that relates to this. I and my sibling are aware of white salt - and that's good, yet my sibling discovered pink salt and has been buying it over the other for a time now - even telling about the benefits over regular salt. Sounds like a "productocracy" in a "commoditised" market to me!

If this is possible, it means the product does not need to be commodified, but the industry has become so.

Airlines are commodified.
Insurance is commodified.

But you can spin these industries to break out of the commodification of the product.

The product Delta and United and Southwest Airlines all provide are commodities where the best price usually wins.

A private jet, or a luxury cabin breaks out of that box.

Insurance for high net-worth people is different than that of your average person. It's a different box.
