Looking for Hosting Company to fit my needs and have questions.

I am looking for a hosting company to fit my needs, and also find out what my needs will be. I am working on an app that will be SaaS and I want it to be fast, and want all data backed up, safe against hacks, etc, and retrievable at all times. I would like to consider Virtual Private Server, or a Dedicated Server.

My questions to better understand what I would need are:

1) What are the pros and cons of VPS vs Dedicated Server?
2) What are the costs per month I am looking at?
3) Should I look at a scalable solution, Pay as you go, or upgrade as website usage grows to larger plan?
4) Backups? How would you organize full backups? I would want daily or real time backups. Would this be wise to let the hosting company manage this as well?
5) Should I look local first? Look for a local datacenter in case of future problems?


Please give me any recommendations and prices of who you use. What should I watch out for?
