You've overthinking it.

Has anyone stole clients from you yet? If not, focus on making money.

Worry about this when someone actually does it and then, like Johnny Boy said, put systems into place where freelancers who do the dirty work don't deal directly with clients.

For now, for piece of mind, just do simple contracts that would make the freelancer think twice before stealing your clients.

Of course, you should always have contracts with your clients.
