Income/Sales Projection

Hi everyone,

My name is Will and I am from Yorkshire, United Kingdom. I am just after a bit of advice from anybody who might happen to be in a similar trade...

I am due to open a premium coffee and handmade chocolate shop in a busy city shopping mall (12.4m annual footfall). The business is a simple one that involves me making my own chocolate truffles (various flavours) and selling them in the shop along with my own brand of coffee. The chocolates are packaged in boxes and gift wrapped etc. The idea is to scale the business and open numerous shops around the UK.

I have only been involved in online business in the past and have not ventured into the bricks and mortar world so it is all a bit new to me.

This brings me onto my question. What percentage of footfall could I realistically look to convert into customers provided I have very good marketing aides and top quality products?

I understand that this will vary depending on a number of factors but I am just after a rough figure so I can predict my income/sales more accurately.
