How to avoid payment related mistakes while outsourcing work to freelance accountant?

All,

I got some growth in IT Recruiting, It's not huge but to focus more on development work I need to outsource
accounting, making sure payments actually arrived in bank or by cheque, payroll.
Since some payments , invoicing is weekly, some monthly there is work involved. Currently I have 4 contracts to manage. So my questions are

1) What is the safest approach to outsource the work?
2) How much money should I be spending?
3) How do I ensure no mistakes are being made? Even one missed payments or wrong entry may cost me
few grands.

I have few steps and I can document the process but want to have some inputs as well.
