I wrote a LONG post explaining this case and then I lost it before posting (operator error, not used to the new forum format yet).
Basically, a customer approached us for SEO help.
Store running on Volusion.
Lots of images. Not enough text.
Ranking in pages 7, 8 or 9 for main keywords.
To give you an idea, let's assume his store sells "Dancing Shoes". Users also search for "Dancing Shoe".
See Adwords keyword research to see volume:

To make the long story short, I decided to tackle sub-niches instead of the main keywords directly.
I gave him pointers to go after "Salsa Dancing shoes" first, optimize the main page for that line of products, and then we moved on for "Ballet Dancing Shoes"... we did this for 5 keywords.
We optimized the alt for the images, to be something like: "Salsa Dancing Shoes - Black Shinny"
Then we worked on linking to those sub-niches with the right anchor text. Ex: Anchor text was "Salsa Dancing Shoes".
After researching the competitors I decided it was better to take this approach, instead of going for the main keywords upfront.
The strategy was to build credibility about the sub-niches and then, by association, the main keyword would be picked up.
As I said, I had written a more detailed description of what we did, but I lost it and I am tired, so I will post some pics to provide more info, and I will answer questions later.
Thanks for any feedback/questions you provide.

Sub-niche keyword ("Clearance Shoe"):
his site was already ranking well, but volume was low. We made minor improvements, but it worked, that page went to PR 1 in a short period of time:

Subniche keyword ("Salsa Dancing Shoe")
They were not ranking in March, when we started:

Same subniche keyword, in plural (Salsa Dancing Shoes):
Same story, no ranking in March:

Other keywords we used (sorry, I don't have tracking for all since the beginning, we started tracking recently for some of them, but the story was similar, not ranking in top 200 when we started):

I have others, but they are similar, and we were using them to leverage their 'trust-factor' in order to rank higher on the main keywords.
Again, questions welcome, but I am tired and going to bed.
