Pre-selling and gauging buyer interest - best service to use?

I have come up with a product idea and want to pre-sell it, but not in the traditional sense of a landing page with a "coming soon - please enter your e-mail", but where a customer would actually put their payment info in and only then get an out of stock message. I want to gauge REAL buyer intent this way in terms of them pulling their wallets out.

ClickFunnels has an option to have an out of stock pop up window on pressing "buy now", but I'm not sure how to track it there. Maybe with a facebook pixel.

Does anyone have experience doing something similar with their landing pages?
