I think I already gave you a starting point for some market research. Talk to the Chinese community in Montreal. Give them a product to taste and get a pool of opinions about Maple Syrup, see if there is some potential demand for the product. If you get any meaningful validation, move forward. Can't give you much more in terms of advice.
Get yourself familiar with the Chinese market place. Read a book called "Poorly Made In China" by Paul Midler. Gives some good insight to how Business in China is done.
