Changing web/app developers while project in progress?

We are currently working with a development firm that has built our website from the ground up in Ruby on Rails, HTML5, etc. They are currently hosting the site on their servers while we beta test.

I have concerns about the development firm's ability to complete the revisions we require. If we wanted to bring in other developers to complete the project is that feasible? I'm considering hiring developers from Odesk for "one off" specific revisions.

Would a new developer be able to work with the code our current development firm has created?

Would the site need to be hosted on our servers?

Any other insight is greatly appreciated.
