OpenAI, Gemini, Claude and others all store your chat history in the cloud, so nothing you share with them stays private. They also use this data to retrain their models.
If you're concerned about uploading sensitive information, your best bet is running a chatbot locally on your laptop that works completely offline.
I've got an offline AI chatbot setup here... It is running off my laptop and doesn't share prompts / documents to anyone.
