That doesn't make sense. Shouldn't it be 100%? They are two separate populations. It bugs me that this is promoting flawed mathematical thinking.

You are reading it wrong, try something like this:
97% of the people -- who quit too soon;
are employed by the 3% -- that never gave up.

That's the problem. Why are 97% of the people who quit too soon employed by the 3% that didn't? In the context of "employed", the population has already been split into quitters and winners. The implication of the quote is that 100% of the people who don't quit employ 100% of the people that do. Really it should say, "3% of the people don't quit and employ the 97% that did quit". But it's not very snappy I guess.

It's:
97% of the people <--- they are quitters.
