Big advantages and big disadvantages to either option.
Co Founders that you don't know well are a huge risk factor.
The advantage of co founders is that you keep each other going and ideally have complementary areas of expertise. e.g. one tech guy and one sales guy.

ALWAYS have just 1 founder. If you need someone to keep you going, hire someone part time for $10 an hour just to keep you going. I would stay away from the opposite sex unless he/she is the drill sergeant type.

The thing that two founders do have is positive feedback loop - whether about something true or just hot air.
You gotta consider Survivorship bias - Wikipedia - basically we don't know how many 2 co-founders had failed cause mostly they aren't at first pages of news papers.
