Best Way To Setup A Pre-Order Page????

Not sure what you mean by "paying double." Celery does pre-orders, and taking pre-orders helps young business survive. Stripe and PayPal can't do them. You don't get charged by Celery until you charge your customers. So it's more like "paying nothing" until you actually start making money yourself.
