Why don't companies put their email address in a prominent place?

I work as a buyer in my day job. One thing I have noticed is a lot of companies do not put an email on their website. Some want you to fill out a form. But I don't want to fill out a form, I want to click on your email and fill out my inquiry as an email through Outlook that has all my company details in my signature. If you force me to use a form I will leave your website and not send you an inquiry.

Put your email and phone number in the header of your website. Such a simple thing to do but so many businesses don't!

Sadly, this can be a terrible idea. Bots are constantly scraping the internet, picking-up e-mail addresses and phone numbers to spam. (Sometimes people write (at) instead, but I think the bots have grown accustomed to that).

An inquiry page, with a 'proof' section from a place like CAPTCHA (The Official CAPTCHA Site) validates some of this.

I have a friend with a business that's all about local lead gen and catching the customer in the first minute or so, so he has his phone number on every single website in the top, right corner but since he started (this year) the spam has grown exponentially. And they've gotten smart where they now mimic your zip code or even your town.
