p.s. I'm totally down with finding needs/wants/desires and coming up with a solution its just the cookie cutter factor that gets me.

I still don't get it.
Looks like a great place to find a need.

A big enough need that makes business owners complain about it?
Make an excel table and count how often each wish occurs.

Make it reality and sell it.

Yeah, I don't get the hate on idea extraction myself either. Sure it might be a pain in the a$$ and take longer than is comfortable to get a solid idea, but that's the point. The barrier to entry for idea extraction is that determination. Who's really going to call 250 different restaurants across the US until they can find an idea that makes sense? Who's going to take the time to sit on the phone to get the idea, sit on skype to develop the idea, render graphics displaying the idea, build a website and pre-sell the idea, then actually go out and hire a team to build it?

It's rough work, but it's possible all the same.
