Are you able to write off ebay fees and paypal fees as a lost for taxes?

Fees are a cost of doing business. I'm not an accountant, nor do I even balance my checkbook, so I highly recommend that you confer with a professional tax accountant!

But fees are a legitimate expense, which offset your taxable income.

Thanks for the plug Jorge!

Yes, your eBay fees are a deduction against your eBay income. Go to "my eBay" on the eBay site and check out the online workshops. I do one every month over there and there is a lot of information on the site!
