A niche is definitely not found by searching for what everyone else is selling, unless you can find within that market a smaller sub-group with interests/needs/wants different to the great majority.I definitely need to find a niche.
As you have experience with the bread business, let's consider that.
Almost everyone eats bread, so it's a great market where the product sells like hot scones but there are possibly sub groups within that huge market. For example: Gluten Free.
People who are gluten intolerant or coeliac are forced to pay too much for bread that is often just an imitation of the real thing. Find a bakery producing a gluten free bread that such people will enjoy eating, or even a gluten intolerant person who makes their own delicious bread and you can supply a real niche.
Tasty gluten free cakes (not dry) for supplying to restaurants and coffee shops would be another niche.
