I guess without context it's hard to answer, because you could easily just ask someone "hey man, so what do you like to do?"

What is a good way to get someone talking about what they enjoy most, without blatantly asking them?

Invent a mind reading device or a brain scaning device!

Apart from that option, the only option you have hinges on what type a of a relationship you have with that person.If it is a random person you met in a specific environment in which you also enjoy spending time , then there is a high chance that person too enjoy it.For an example, a person you met in a foot ball match or any sporting event.

Sorry forgot to add the context, so it will be a customer(and stranger) of my business. Before working I'm looking to build a relationship and want to talk about what they are most interested in.

For a stranger to open up, you need to anchor first by starting a mutual topic, something that both know.Then slowly slide into what you want to know from that person .Most of the time that had worked for me when striking a convo with strangers.

I get sold to all the time. I buy from some. I'm friendly with some. Let me put a question to you: Two guys come in to sell to me. One guy is upfront, and clearly explains what his product/service can do for me. The other sees a picture of my kid and pretends to be interested. He's 24 and still has a faint stain from the ink stamp of the club he went to over the weekend on his hand. He's also got a good product, and is confident in it, but he led off by trying to manipulate me by feigning interest in what interests me.

Which guy do you think I buy from?

The guy that is upfront.

However this is an either or situation, what if the 24 year old was actually interested?

I definitely see your point though
