The market will reveal if 'tippable service' is worth it or not. If people, by and large, would prefer NOT tipping and getting European-style service, then the trend will catch on.
Tell you the truth, we've been seeing 'fast casual' restaurants dominate the lunchtime space for the past 10-15 years. No wait staff, just cooks, assemblers, and cashiers manning a single file line of people. There's no tipping there. Not saying that chain restaurants are gonna turn into that, but I'll tell you that I get a much better burger at Five Guys than at Applebee's, and guess what: it's cheaper and faster, too... largely because I don't have to tip 20%.
