If you're going to do it reguardless of what anyone thinks, then go ahead.
However,
I personally think it's a bad business idea.

So I came up with an idea that I think will be a great starting point and a money generator for me. My grandfather is 70 years old and has done everything you can imagine with handyman work. He has ran his own handyman business for over 40 years. Here's my idea. I want to compile in video, audio and text all of his know how when it comes to fixing/replacing things around the house and his years of experience in welding as well. I plan on building a website to promote the e-book when I'm finished with the process of writing it. Then, offering different packages from just the e-book to the entire audio, video, and e-book. Any advice, pitfalls, things i'm not seeing would be greatly appreciated.
P.S. I plan on doing it anyways just to have it for myself if nothing else but I feel there would be lots of people that would benefit from this.

You wouldn't get rich doing this. But if you did it right, you could make a living.
I'd say give it a shot

I think its a great idea so long as you are apporaching it from "creating a business system" or how to. Handyman businesses can be very profitable especially when you use flat rate pricing rather than time and materials. Generally with a handy man business, you own a job rather than a business unless you have folks working for you. This is why I think if you create a business system to teach someone how to start their own handyman gig, train them on the business end, including pricing structure and some basic how to, it has the potential to be very profitable. You may even want to start a handyman business and grow it for a year then put the business up for sale, offering training and a customer base. Some people do not have what it takes to start a busienss from scratch and would rather purchase one already up and running. Might even be more proffitable this way too.
I Agree played right, everything has the opp to make millions...
Ask a hot dog vendor in New York with a good location.
I agree with Jack. It's all how you approach the business. Cable show, books, products, you name it can be sold promoted to make it a big money opp. Case and point is Bob Villa and those types.
Of course if this takes off, your grandfather going to be looking for a bigger piece of the action...especially if you're going to be working him to the bone.

Why not make "The DIY Bible" or something to that degree ... available at all major bookstores, Amazon.com, Lowes, Home Depot and other similar stores. And, of course, the website too.

I would test the demand of the niche first. Try to offer a small information product, something that would not take too much time to make. I'd go with an ebook and charge $7-$24. Then I'd use adwords to drive some traffic to it. this way you can see how much demand is there for people who want to learn how to become a handyman.
If demand is good, you can then proceed to making the rest of the videos and coming up with a bigger product. This way, you will know if it's worth the time and effort investment.
