Rum and Ice cream

I have been known to have a beer with my ice cream

as long as the rum is good, I'd give it a try...rum is my liquor of choice anyway. My wife once had a drink at the House of Blues called a Mad Groovy Penguin that was an ice cream "drink". It was made with vodka and had a mint chocolate theme...kinda like a grasshopper. Pretty tasty, although I tend to stick with the lower calorie rum and diet coke.
